I think Paul is right. The oven should be turned down to 325 and start checking after 10 minutes.
Um....before I try this, the 400-degree oven temperature seems way too high to have whites "just setting" after 15 minutes. I would expect rock hard yolks as well. Are you sure this has been verified before I waste 8 eggs?
