We enjoy eggplant. This seemed rather a different use of it, but the recipe is as good as others have noted. Absolutely delicious pizza. Used my own pizza dough and pesto and less time in the oven. I follow the Cook's Illustrated guidelines for making pizza. It would have been burned to a crisp otherwise.
Curiously, my family, including 4 grown sons, like eggplant. I didn’t have time to make this pizza recipe but followed the recipe—except for putting the eggplant on pizza dough. It was a major HIT! Pretty easy! Quick! And, wonderfully delicious. Great vegetarian dish! Might try this with portobello mushrooms.
I hate eggplant but wow this pizza was very surprisingly good.
