Dutch Clover

Inspired by one of her favorite Bee's Knees variations—the Gold Rush, made with bourbon instead of gin—Lynnette Marrero decided to come up with her own version using Dutch Genever, which has a malty, whiskey-like quality.   • Ice

  • 1 1/2 ounces genever, preferably Bols

  • 1/2 ounce aquavit

  • 3/4 ounce fresh lemon juice

  • 3/4 ounce honey syrup (1 tablepoon honey mixed with 1/2 tablepoon warm water)

  • 1 lemon twist, for garnish


  1. Fill a cocktail shaker with ice. Add the genever, aquavit, lemon juice and honey syrup and shake well. Strain into a chilled coupe and garnish with the lemon twist.
