In Cole's Dinkies Cheezesteak, a plant-based version of Hayes' meat-packed hoagie, plant-based meat gets piled into toasted rolls with tender peppers, onions, and gooey pools of vegan cheese. By Pinky Cole and Derrick Hayes Published on July 22, 2021 Print Rate It Share Share Tweet Pin Email Photo: Photo by Caitlin Bensel / Food Styling by Chelsea Zimmer / Prop Styling by Lydia Pursell Total Time: 30 mins Servings: 4 Ingredients 1 ½ pounds plant-based ground meat (such as Impossible or Beyond Beef) 1 tablespoon plus 1 teaspoon all-purpose seasoning blend (such as Slutty Vegan Slut Dust) 1 ½ tablespoons olive oil 1 medium-size green bell pepper, stemmed, seeded, and thinly sliced (about 2 cups) 1 small yellow onion, thinly sliced (about 2 cups) 6 (3/4-ounce) vegan American cheese slices (such as Follow Your Heart or Daiya Foods) 6 (3/4-ounce) vegan provolone cheese slices (such as Follow Your Heart or Daiya Foods) 1 tablespoon water 6 tablespoons vegan mayonnaise (such as Follow Your Heart) 4 (8-inch-long) vegan sub rolls, split horizontally and toasted Directions Using your hands, mix plant-based meat and seasoning blend in a medium bowl until well combined. Set aside. Heat oil in a large skillet over medium-high. Add bell pepper, onion, and plant-based meat mixture; cook, stirring often to break mixture into small pieces, until bell pepper and onion are tender, plant-based meat is browned, and no liquid remains in skillet, 12 to 16 minutes. Reduce heat to medium-low. Spread mixture in an even layer in skillet, and top evenly with vegan cheese slices. Drizzle 1 tablespoon water around edge of skillet. Cover and cook until cheese is melted, 2 to 4 minutes. Remove from heat. Spread 1 1/2 tablespoons vegan mayonnaise over cut sides of each sub roll. Fill rolls evenly with plant-based meat mixture.
