Cucumber Salad


Vinegar, sugar, salt and onion add gentle, versatile flavor to this quick-and-easy cucumber salad recipe. All it takes is a few extra minutes of marination time to soften the bite of the onions and help the tangy seasonings infuse every bite of cucumber. Pair the salad with grilled hot dogs or pork chops in summertime, or serve as a cool contrast to roast chicken or poached salmon in colder months. Feel free to make this up to a day ahead and store it in the fridge—the salad will only get tangier and more delicious as it sits.

  • 1 pound seedless cucumbers, thinly sliced crosswise on a mandoline

  • 1 1/2 teaspoons sugar

  • 1 1/2 teaspoons kosher salt

  • 2 1/2 tablespoons red wine vinegar

  • 1/2 small onion, thinly sliced


  1. In a medium bowl, toss the cucumber slices with the sugar and salt and let stand for 5 minutes. Stir in the vinegar and onion and refrigerate for 10 minutes, then serve.
