How to Make It


In a medium skillet, heat 1/4 inch of oil until shimmering. Add the shallots and fry over moderate heat, stirring, until golden and crisp, about 5 minutes. Using 
a slotted spoon, transfer to paper towels to drain. Season with salt and let cool.
