Chai Almond Deluxe

Drink consultant Chad Solomon was inspired to create the Chai Almond Deluxe while reading Shantaram, a novel set in Mumbai. Chai-infused cognac combines with vanilla almond milk for a creamy spiced cocktail.

Chai-Infused Cognac

  • 8 ounces cognac

  • 2 chai tea bags

Chai Almond Deluxe

  • 1/2 ounce Honey Syrup

  • 1 1/2 ounces vanilla almond milk

  • 1/2 teaspoon pure vanilla extract

  • 1 large egg white

  • Ice


Make the cognac

  1. In a jar, combine the Cognac with the tea bags. Let stand for 2 hours. Strain into an airtight container and refrigerate for up to 1 week.

Make the cocktail

  1. In a cocktail shaker, combine 2 ounces of the Chai-Infused Cognac (reserve the rest for another use) and all of the ingredients except the ice and shake for 10 seconds. Add ice and shake again. Strain into a chilled coupe.
