This recipe was quite a bit of trouble and absolutely 100% worth it. All the people I shared them with said they were the most delicious cookies they'd ever had. The cookies alone could be made and resemble shankarpali, a deep fried cardamom cookie common in Maharashtra. The peda filling had just the right notes of toasted milk and sweetness to taste like the desserts. I couldn't find edible flowers but otherwise followed the recipe perfectly, including gold leaf ordered off Amazon which elevated them to another level. The only change I would make - I refrigerated the dough for 3 days and it took almost an hour to soften up enough to roll out. Next time I will only chill for an hour and bake the cookies ahead of time and fill day of. I will definitely make this again, even if just the shortbread alone.
