  • In a large cast-iron skillet, working in batches, lightly char the pineapple over moderately high heat, about 5 minutes per side. Let cool, then chop and transfer to a bowl. Add the onion, jalapeño, garlic, cilantro and lime juice. Season with salt and pepper and serve with tortilla chips.
