I love this recipe. It's easy and delicious. I saute the onion and garlic first in a pot and then just add everything from step 1. Once the barley begins to soften, I go on to step 3. One ingredient you can't skip is the queso. It really makes this dish.
Great and easy recipe. Loved it. I did cook up the onions and garlic as Evarli suggested then skipped to step 3. One less pot to wash that way. I doubled up the tomatoes and the lima beans and used Farmers Cheese. The cheese was a great addition. Great recipe.
