Baltimore-Style Rub

This homemade version of Old Bay is equally spicy and zippy, but far less salty. Use it on fish, shellfish, chicken and pork. Slideshow: More Spice Recipes 

Baltimore-Style Rub

  • 2 tablespoons celery seeds

  • 2 tablespoons mustard seeds

  • 1 ½ tablespoons paprika

  • 1 tablespoon kosher salt

  • 1 teaspoon black pepper

  • ½ teaspoon crushed red pepper

  • ½ teaspoon ground ginger

  • 1 bay leaf (crushed)


  1. In a spice grinder, combine all of the ingredients and pulse until finely ground. Transfer to a small bowl.

The Baltimore-style rub can be stored in an airtight container for up to 3 months.
