I’m 4/4 on this dish w friends & family. Served it on a guys golf weekend after a long night and killed it. I stopped baking it after overcooking the eggs, so I cover the skillet just long enough to cook the top of the eggs a bit.

Save some time: I chop the potatoes (with skins on, because I like them) and the onions, and cook in the microwave until softened, then add to the skillet and proceed with the recipe. Quicker, and just as good! This is one of my favorite breakfasts.
