I cooked with what I had available during COVID quarantine - boneless, skinless chicken breasts. I know it would have been better with thigh/leg as the breast was dry. Good complete one-pot dish as I used a Le Creuset pot for both sauteing and roasting in the oven. I didn't care for the mint here, it seemed odd. I think if I made it again, I would add fennel seeds and nix the mint.
