Bajan Spice Syrup

Use this syrup to make Père Labat's Punch.Plus: Ultimate Cocktail Guide

10 ounces


  • 1 tablespoon whole cloves

  • 1 cinnamon stick, crushed

  • 1 tablespoon cracked or very coarsely grated nutmeg

  • 1 cup water

  • 1 cup sugar


  1. In a small saucepan, combine cloves, cinnamon and nutmeg. Add water and sugar and bring to a boil. Cook over low heat for 15 minutes. Strain the syrup into a heatproof jar and let cool, then cover and refrigerate for up to 1 month.
