  • 1 ½ cups watermelon juice

  • 1 teaspoon soy lecithin

  • Sea urchin

  • Spanish extra-virgin olive oil

  • Juice of 1 lime


  1. Combine the watermelon juice with the lecithin. Mix with a hand blender, tilting the bowl to incorporate air. Put the sea urchin in shallow bowls. Dress with olive oil and lime juice and top with the watermelon mixture.
