Preserved Ginger

 Delicious, Quick Side Dishes

2 tablespoons



  • cup water

  • cup sugar

  • 2 tablespoons finely julienned ginger

  • 3 cups cool water


  1. Bring the water and sugar to a boil in a small saucepan and let cool.

  2. Place the ginger in another small saucepan with 1 cup of cool water. Bring to a boil and drain. Repeat this process 2 more times. Add the drained ginger to the Simple Syrup and bring to a boil. Reduce the heat and simmer for 30 minutes.

Serve With

Salmon with Olympia Oysters, Hijiki Seaweed and Ginger-Shiso-Mirin Broth.
