What an awful recipe! I had to throw this away. Doesn't any supposedly reputable source have the resources anymore to test recipes before publishing them? This recipe proves that, no, Food & Wine doesn't test recipes. I'm a veteran cook, but I've never cooked amaranth. This looked like a good recipe to try. The results were disastrous. There was way too much liquid. One can (1.5 cups) of coconut milk would have sufficed. Also, there's too much coconut in this recipe. One whole cup is too much. That's all I tasted and chewed upon in every bite. The amaranth wasn't perceivable at all in this dish, and I don't think that it was cooked at all , even after an hour in the oven. Thank you, Emily Farris, for ruining a bunch of good ingredients and for not being able to test and write a simple recipe. Kudos! I wish that I could find a job being a know-nothing and get someone to publish my bad recipes.
