This is an adaptation of the Air Mail cocktail in W. C. Whitfield's 1941 Here's How, which calls for "a jigger of fine rum" in addition to lime juice, honey and Champagne. Mixologist Richard Boccato opts for white rum but says aged rum is tasty, too.

1 ounce white rum
1/2 ounce fresh lime juice
2 teaspoons honey mixed with 1 teaspoon warm water
1 ounce chilled Champagne
How to Make It
Fill a cocktail shaker with ice. Add the rum, lime juice and honey syrup and shake well. Strain into a chilled coupe and stir in the Champagne.
