This Fourth of July, the gas versus charcoal debate is over. Much like the British in the 18th century, gas is the big loser and is “kinda missing the point of grilling” – at least according to “science.”

This is just one of the many aspects of the chemistry of grilling that YouTube’s Reactions decided to delve into in honor of cookout season. According to the channel, grilling over coal or wood introduces a whole host of aromatic compounds and chemical reactions that gas grilling simply doesn’t replicate. So while gas may win when it comes to speed and simplicity, propane can’t compete with coal or wood when it comes to flavor, Reactions proclaims – no matter what Hank Hill told us.
