Become the Goblin King with These Labyrinth Peach Cookies
This September is the 30th anniversary of the Jim Henson fantasy classic, Labyrinth. While you should beware of any peaches that come from the Goblin King, these peach-like pastries promise no ill will. And if you don't know what any of that means, you really need to go rent Labyrinth immediately.
Made from light cookies sandwiched together with fresh peach jam, their colorful sugared forms give you the illusion of a stone fruit from Jareth without taking you to an elaborate dream world.
Labyrinth Peach Cookies
- 3 cups all-purpose flour
- 1 Tablespoon baking powder
- Pinch of salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup sugar
- 3 eggs
- 1 Tablespoon orange juice
- 1 teaspoon lemon juice
- Yellow food coloring
- Red food coloring
- Peach jam
- Mint leaves
Preheat the oven to 350 degrees. Prep baking sheets with parchment or silpats.
In a bowl whisk together the flour, baking powder, and salt. Set aside.
In the bowl of an electric mixer, cream the butter and sugar.
Add the eggs, orange juice and lemon juice until combined.
Slowly add the dry ingredients until just combined.
Using a #20 (2-inch) disher or ice cream scoop, scoop the dough onto the prepped baking sheets.
Bake for 12 minutes, the move to a wire rack to cool.
In separate bowls add water to the yellow and red food colorings. Dip the cookies (rounded side down) into the yellow mixture, then the red, then press into the sugar to coat.
Once the cookies are dyed and sugared, spread peach jam onto the flat side of the cookie, add a mint leaf, then sandwich the flat sides of two cookies together to serve.
