What: Every corner of America has its own beloved breakfast meat; in the Cincinnati area, that’s goetta (“get-uh”), a sausage mash of pork, oats, and spices. At Orchids at Palm Court, chef Todd Kelly ups the oats and reimagines goetta as a porridge — rich with pork, celery, and onion, and topped with a poached egg. Pork porridge for breakfast will cure anything that ails ya.
