Goat Cheese Is The Ingredient Missing From Your Summer Burger
When summer is in full swing and you're crushing burgers daily, it's always a good move to mix it up with a new burger recipe to keep life fresh. Something exciting, unexpected, and totally stuffed with goat cheese. This recipe is quick and easy to assemble and holds the keys to creamy, crispy, pan fried to perfection.
Goat Cheese Stuffed Burgers
Makes 4 1/2 pound burgers
- 1 pound ground chuck
- 1 pound ground sirloin
- 1 tablespoon butter
- 1/3 cup goat cheese
- 1 large, ripe avocado, sliced
- 1 large heirloom tomato, sliced
- 4 burger-sized lettuce leaves
- 4 tablespoons mayo
- 4 brioche buns
Divide the beef into 4 equal, 1/2 pound portions. Flatten the beef into small discs, about an inch larger than the width of the burger patties, and divide the goat cheese between the burgers, placing the cheese into the center of the discs. Carefully form the beef into a small balls, closing off any corners and sealing in the goat cheese. Using the palms of your hands, carefully reshape the beef into burger patties. Season both sides of each burger with salt and pepper, and set aside.
Heat a large pan over medium heat, split the brioche buns, and toast each halve until golden brown. Set aside.
Heat a large cast-iron pan (or heavy bottomed skillet) over medium-high heat and melt the butter. Fry the burgers for 4 to 5 minutes per side, until a nicely browned crust forms on the outside, and the beef is cooked to desired doneness on the inside.
Build each burger with 1 tablespoon of mayo, a stuffed beef patty, 1 slice of tomato, a few avocado slices and top that bad boy with lettuce.
