What: We’ll eat falafel as a hangover-busting, belly-filling brunch any day. Falafel in waffle form? Hell, why not. With a name right out of a Dr. Seuss book, the “Falafel Waffle” at Green Fig in Manhattan is made from Egyptian fava bean falafel, popped in a waffle iron then topped with poached eggs and bacon. There’s tahini hiding in those little waffle ridges, and more tahini drizzled on top.
