Several months ago, my oven mysteriously stopped working. We were also in the middle of redoing our basement, so dishing out a few hundred dollars for a brand new appliance just wasn't in the cards. Believe me, not being able to bake my favorite brown sugar salmon or whip up fresh cookies is something I'll never take for granted again.

Made by the same company that designed the beloved Instant Pot, the Instant Vortex Plus is equally versatile. It is able to air fry, roast, bake, broil, reheat, and dehydrate food at the push of a button. Even if you're a novice, its preset cook times and step-by-step instructions for each setting are incredibly easy to use. And for fuss-free washing, the air fryer's tray and basket are removable.

But what surprised me was that I was able to cook my favorite foods such as fish and Brussels sprouts in the air fryer much more quickly than my traditional oven. That's because it can get up to 400 degrees Fahrenheit in just minutes. The minimal preheat time is incredibly helpful when I'm rushing to cook after a long evening of teaching yoga; I'm usually able to make a full meal for three to four people in under 30 minutes. I seriously do not miss my regular oven at all!

The Instant Vortex Plus is quite compact, but I can still cook a ton of food in it. It has a 6-quart capacity with an internal basket that's about 10 inches long and wide. It holds 2 pounds of French fries and 4 pounds of chicken, and you can layer foods like veggies, fries, and wings, and still cook everything all the way through. Its 14.75-inch by 13.8-inch footprint fits perfectly on my kitchen countertop without taking up much space. I also sometimes toss it into our bottom cabinet when we have people over, and it stays hidden with no problem.
