Because several of my closest friends are Indian, I inevitably celebrate a few Indian holidays throughout the year. In March, for Holi, or the Festival of Colors, we wear our oldest clothing, go to a park, and run around throwing brightly colored powder (gulal) at each other. For Diwali, the Festival of Lights, which occurs either in late October or early November (it's this week this year), we usually have a giant feast at one of our apartments or go to one of our favorite Indian restaurants. Because we've recently spent a good chunk of time debating where to eat for our upcoming Diwali dinner—the supercrispy fried chicken at Suvir Saran's recently reincarnated Devi in Manhattan definitely figured into my argument—and because I'm currently deep into an advance copy of Jhumpa Lahiri's new collection of short stories Unaccustomed Earth (Knopf, April 2008) and her evocative dish descriptions, I've had more than my usual hankering to cook Indian.
