Take a break from your ice cream cones and check out this tangy refreshing Mojito Jar from Maman, the stunning bakeries in Manhattan and Brooklyn. Layered with bright lime custard and crubles of sweet cookie topped with a mint-rum jelly and meringue is the perfect summer dessert. We got the inside scoop of how to make this boozy delight. 

Maman Mojito Jar Recipe

For custard:

  • ¾ cup milk
  • ¾ cup lime juice
  • 2 eggs
  • ½ cup sugar
  • 1/3 cup corn starch

Heat milk and lime juice in a pot on the stove over medium-low heat. In a bowl mix eggs, sugar and cornstarch. When milk is about to boil, pour it into the bowl with the egg mixture, then back into pot and boil for 1 minute. Remove from heat and put in refrigerator.

For sablé crust:

  • 1 ¾ cup all-purpose flour
  • 14 tbsp butter
  • 1 cup sugar
  • 3 eggs
  • pinch of salt

Mix butter and sugar in an electric mixer with a paddle on slow speed. Add eggs and salt, then mix in flour, being careful not to over mix. Once blended, press flat onto a sheet pan and place in oven at 340 degrees. Bake for 15 minutes or until it turns to a beautiful golden color. Once cooled, break up the crust into small pieces.

For lime, mint & rum jelly:

  • 1 cup water
  • quarter of a bunch of fresh mint (about 10-15 leaves)
  • zest of 2 limes
  • 2 ounces rum
  • 2 sheets of gelatin (about 1 ½ tsp)
  • 2/3 cup sugar

Heat water and sugar on the stove over medium-low heat. Add mint, lime, gelatin and rum and mix together. Pour into a pan so the mixture lies flat, about 1 inch high. Cool down and put in freezer, then cut into cubes.

To layer jar: take a 10 oz jar and layer starting with lime custard, crushed sable crust dough, and jelly cubes, about 1 inch high for each layer. Repeat until jar is full. Makes 8 servings. Enjoy!
