At the Original Dinerant in Portland, Oregon, they’ve got “crazy shakes”; they’ve got a “crazy burger” but most important at this moment in time, they’ve got Crazy Grilled Cheese.  “We wanted to push the envelope a little,” says chef A.J. Voytko. “Thus the OG Crazy Grilled Cheese was born.”

Any great grilled cheese requires super-buttery griddled bread and ample melty cheese; nail that, and you’re golden. Is it still a grilled cheese when you start throwing in ham? Tomatoes? Fries? Well, we won’t get hung up on semantics. 

The bread: Two inch-thick slices of griddle-toasted brioche, cut the full length of the loaf.

The filling: Melty blankets of both Tillamook Sharp Cheddar and Tillamook White Cheddar. Then there’s shaved ham, Mama Lil's peppers, tomatoes — “and it wouldn't be complete without crispy fries.”

Why serve them with the sandwich when you could serve them in the sandwich?
