This debate got new life several years ago when Jacques Torres decided that both sides were wrong and started using chocolate disks, which melt into rich seams of chocolate through his flat, exceptional cookies.
Crunchy vs. Chewy
An argument as old as cookies themselves. There was some compelling research done by John Allen out of Harvard that says humans gravitate toward crispy foods partly for evolutionary reasons and partly because we just like the sound of the word (the onomatopoeia of the word crunch prepares our brain to taste something delicious).
