When Anthony Bourdain speaks, the people listen. So pay extra attention to this nugget of info, because you're probably ruining one thing it should be easy to perfect.
To promote his new book Appetites, Bourdain sat down for Marc Maron's WTF podcast to discuss one of the biggest cooking crimes in this country: poking meat.
"No one knows how to grill a backyard steak in this country," Bourdain revealed. "They cook it too high, but the biggest mistake — what everybody does — is they're poking it all the time, they're jabbing it and poking it, checking to see if it's done inside."
So what should us mere commoners be doing instead?
"Let the thing sit," he said. "Because what's going on inside that unmolested steak is all sorts of magical recirculation of its juices, and it comes out perfect."
So, if you have some hungry people to feed at home, take note: Stop prodding the damn thing and teach that unruly mob at your house to have some patience.
