There’s no disputing that a great ice cream sandwich is one of summer’s great pleasures. And truth be told, a great ice cream sandwich doesn’t have to be fancy at all — give us a drippy Klondike after a day on the beach and that’ll do just fine.
But recently, restaurants and scoop shops have taken the ice cream sandwich upscale, with innovative ice cream flavors, unusual sandwiching sweets, and ingenious technique. From churros to barely-baked cookies to a marshmallow fluff lining, here are our favorite reimagined treats of the summer.
Sable Kitchen & Bar, Chicago
Churro ice cream sandwich? Don’t mind if we do. Chef Lawrence Letrero creates rounds of sugar-coated churros, sandwiches hibiscus ice cream in the middle, and finishes it all off with dulce de leche and candied hibiscus flowers.
Chair 5 Restaurant, Narragansett, Rhode Island
Chef Basil Yu, who heads up Chair 5 at boutique hotel The Break, welcomes in the summer with a S’Mores Ice Cream Sandwich: graham cracker chocolate chip cookie dough, housemade toasted marshmallow ice cream, and caramel. Rather than baking the cookies all the way through, Yu heats them just until set, but still satisfyingly gooey.
Salt & Straw Wiz Bang Bar, Portland
Of course Portland’s best ice cream shop makes Portland’s best ice cream sandwich. At their new “Wiz Bang Bar” at Pine Street Market, they recreate the childhood favorite by mimicking that cookie-brownie hybrid of classic ice cream truck sandwiches — chocolaty, delicious, and finger sticking good. To pull it off they make chocolate cookies with marshmallow fluff, which sandwich their popular Sea Salt with Caramel Ribbons ice cream.
