You’re in luck, the drink scientists from YouTube channel Cocktail Chemistry are here to show you the easy (and relatively safe) way to flame a citrus peel over a drink to impress your classy, cocktail drinking guests. All you have to do is give the peel a little preheat over a match and then squeeze the limonene (a chemical compound that makes up most of the oil in citrus peels) over the flame. The result is a pleasing little flash that also imparts a nice smoky nose to your drink. The Cocktail Chemistry team flamed their peel over a mezcal negroni, but if you’re not a mezcal fan you can try this Scotch negroni recipe instead. Just make sure you don’t burn your eyebrows off.
