One of our favorite Irish products is top-notch butter, the kind that deserves to be used for more than pan lubrication or toast. Here, five foods you probably never considered buttering, but definitely should.
1. Smoked Salmon. Sour cream or cream cheese may be the usual spread with salty smoked salmon, but soft butter is a terrific alternative. For added zip, mix the butter with lemon zest and mustard.
2. Cheese. For a double dose of dairy, Gabrielle Hamilton serves brown bread that’s both buttered and topped with Garrotxa, a Catalonian goat’s milk cheese, at Prune in New York.
3. Tomato Sauce. Using butter instead of olive oil in tomato sauce will smooth out the acidity of the tomatoes. This quick and easy recipe is perfect for both fresh and dried pasta.
4. Radishes. For an easy and surprisingly delicious hors d’oeuvre, dip crunchy, spicy radishes in creamy butter and sprinkle with flaky salt.
5. Burgers. Chef Laurent Tourondel brushes his burgers with butter while they’re on the grill. The natural sugars caramelize, making the meat extra-delicious.
