Boil port until reduced to a syrup.
Grind the bonito flakes, crumbled kombu and dried shiitakes.
Very gently form ground meat into patties, packing only enough to hold them together.
Add patties to a super hot flat cast-iron griddle.
Top with the Stilton.
Top the last flipped burger on the griddle with Stilton.
Sprinkle the burgers on a plate with umami dust.
Drizzle burgers on the buns with port syrup.
