Caroline Schiff


Caroline Schiff is the executive pastry chef at Gage & Tollner, author of The Sweet Side of Sourdough, a 2022 James Beard Award nominee for Outstanding Pastry Chef, and a 2022 F&W Best New Chef. Known on Instagram as @pastryschiff, she is a celebrated pastry chef, culinary consultant, and recipe writer and developer based in Brooklyn.


Schiff got her start in the restaurant industry over a decade ago, working at The Good Fork, Mas (la Grillade), Maysville NYC, Kenton's NOLA, and Greene Grape Provision. She's appeared on Good Morning America, Beat Bobby Flay, Her Name Is Chef, and Chopped.


Schiff earned a Master of Arts in French studies at the University of St. Andrews and studied French language and literature at the Université Stendhal Grenoble 3.
