Above ground, the weather was dreadful, cold and rainy. Right through April and into May. How can anyone produce decent wine in these conditions? [MUSIC] Well, that's a question that has preoccupied the [UNKNOWN] for generations. And that's why they insist on tight control of everything champagne. [MUSIC] There are rules for cellaring. Rules for the harvest. Rules for pruning the vine. [MUSIC] The rules are set by the CVC, the Corporation of Champagne Wine Makers. Its President is Jean Pierre Palizon.
