[MUSIC] My name is Julie DeMatteo, I'm from Clementon, New Jersey, which is about two hours south of here. I work in a real estate appraisal office. My recipe today is an appetizer, it's call Shrimp Toast Puffs. And I got the idea from a recipe that I have been making for probably 30 years where you chop raw shrimp and bacon and ginger and green onions. And you spread it on a piece of white bread. Cut it in quarters and fry it upside down. Now obviously for Cooking Light, I couldn't fry something cuz everything has to be light. So I decided to incorporate all those ingredients, minus the bread, into a cream puff batter. Which I dropped in a cookie sheet and baked it. It's served with two different sauces. One of the sauces is very simply Thai sweet chili sauce with rice vinegar, and the other sauce is soy sauce, sesame oil, chili garlic sauce, rice vinegar, and green onions. My secret is using their cream puff batter because it makes it light. It can be baked instead of fried. And you really can't have the puff without the sauces, they have to go together. This is not my first contest. I've been contesting for about 17 year, I started in 1990. The greatest part of contesting is, coming to a cook off and meeting friends that you've seen at other cook offs. I mean, cuz everybody's just so nice. It's just one big happy family. [BLANK_AUDIO]
