[MUSIC] Hi, I'm Janice Elder, I'm from Charlotte, North Carolina. My recipe that I cooked today is called Seoul-ful Chicken, and that's Seoul, S-E-O-U-L-ful Chicken, with freshly minted cucumbers. It is a marinated chicken thigh in soy, sesame, garlic, ginger, that is cooked in a grill pan and served with an accompaniment of cucumbers that are spicy and minty at the same time. There are several secret ingredients. I would say in the cucumbers, mint and the spices, the peppers to give it the bite. And of course the wonderful soy and sesame and ginger and garlic in the chicken help that tremendously too. And one thing that I discovered is that chicken thighs work beautifully in this recipe because they don't dry out as quickly sometimes as chicken breasts do. I've been cooking since a small child at my mother's knee but growing up in the south it took me a long time to discover that you do not fry everything. So I've loved recipes that are healthy but have a lot of flavor like this one and others that I do. That aren't fried. I never fry anymore. So it goes to show you can get great flavor and be healthy and have a wonderful dish. [BLANK_AUDIO]
