[MUSIC] My name is Melissa Hinrichs, I'm from Omaha, Nebraska, and I am a part time director of marketing for the Gallop organization working with colleges and universities, and the other part I get to be at home with my two year old daughter. Today, I made oatmeal knots. Which is a yeast bread made into a roll which incorporates honey, oatmeal, whole wheat flower and flax seed. To come up with my recipe I started flipping through all of my recipes that I've collected over the years. And I started to really think about What I would like in a healthier dish. And we love bread in our family, and so I decided to see if I could make a bread, just to boost it up with a little bit more nutrients. So, that's why I incorporated the flax seed and the wholewheat flour for Omega-3 and fiber. I learned about the contest through Cooking Light because I've been an avid reader of Cooking Light for so many years. I've always enjoyed flipping through the magazine, finding different recipes that are intriguing, cutting them out, putting them in my binder, and then making my notes alongside those recipes of how maybe I would incorporate different ingredients or how I would change the recipe. So it's really been a labor of love from enjoying the magazine. [BLANK_AUDIO]
