[MUSIC] My name is Katherine Hinrichs. And I'm from West Boothbay Harbor, Maine in the summers, and the Virgin Islands and Caribbean in the winters. I am making a Caribbean shrimp salad with a lime vinegarette. Many times I have to substitute things, so it is a creative one. I run a charter boat with my husband. We take people out a week to ten days and I do all the cooking and he does all the talking and the sailing. I was on board and. We learned that my, some of my family was coming into town on one of the cruise ships and we decided to take them out on a day sail, but I did not have time to get to a grocery store, so I had certain items on board and was able to put together this salad, a little mango, a little spinach, a little shrimps and Put it all together and everybody loved it. I don't really have a secret ingredient. I think many people don't use pumpkin seeds, and I use pumpkin seeds as a garnish. And so that that might be called a secret ingredient. This is my first cooking contest. I decided to enter it on a whim, because I had picked up a Cooking Light magazine, saw the The ad for the contest and just had made that salad that week, and everybody said, oh, enter it, enter it.
