[MUSIC] [SOUND] Whoa. [LAUGH] Guys, this is it. This is the last push. The winner of this challenge gets a spot in the final, and And the dish featured on Chef Emerald's menu. That's a big deal. That's your mark that you're leaving on New Orleans. [SOUND] I deserve to be in the final because I sacrificed a lot to get here. I obsess about work. I obsess about cooking, you know before I even wake up and kiss my husband good morning I call the restaurant. I wanna make it up to him. Winning Top Chef would be a very good start. [SOUND]. [MUSIC]. New Orleans has certainly made it's mark on me, all the different flavors that I've learned about and I hope that I can focus them into one dish. I'm making shrimp dumpling, a comfy of yellow fin tuna, charred pompano, butter roasted bass. My biggest weakness in the competition has obviously been overthinking dishes and underseasoning. Seasoning. Yeah, there are a fair amount of elements on this plate, but it's all about the fish and the broth, and that's about it. Nick's dish is so complex, he's doing what Nick does the best, or worst I should say, is thinking too much again. If one ingredient fell, Nick's dish is not the best bowl. [SOUND]
