Hi, I'm Tim Love and today we're going to take about one of my favorite places to travel for food, New York City. There's not much that I have in common with New York. But I will say this. We never compromise when it comes to food. So when I'm in the city, I'll always go to one place: Lupa. Some people hold up signs at the Today Show, some people go shopping in Soho, but me, I have to eat at Lupa. And the reason why is, I just love the pasta. Mario Batali makes some of the best Pasta in the world. But if you can't make it to New York, I've got a great recipe for you here, pappardelle carbonara. [MUSIC] The first thing you wanna do is put a little bit of olive oil in the pan. Then we're gonna add in our bacon. Now if you have access to some [UNKNOWN] it makes it even better. But bacon will do just Toss the bacon around, we don't want it to really get crispy, we just want it to cook all the way through. And a little black pepper. Now once your bacon sweats a little bit, you're gonna add in the garlic and the shallots. About a tablespoon of each. [MUSIC] I'll add just a slight more pepper once the garlic starts cooking. Now, you can do as much Chile Caribe as you want. I like spicy foods so I add a lot into it, about a teaspoon. When you cook your pasta, make sure you save the water. So, we add this pasta water, just like that. And now we add our pasta. We're using the pasta water to actually heat the pasta up. The pasta water has a little bit of starch in it. It's gonna make your sauce kind of bind together. You can use any kind of pasta you like. For me, for [UNKNOWN], [UNKNOWN] does it. I like the big fat noodles where the sauce can actually wrap itself around Noodle. We're gonna add in our egg yolks. If you leave the pasta on the heat, the egg yolks will cook like scrambled eggs, and that's not good pasta. [MUSIC] Now remember, you're cooking with bacon, it doesn't need a whole lot of salt, but a little bit for sure. Just like so. Now, beautiful sauce Beautiful pasta!
