To make the best BBQ sauce, you have to take the bones of whatever you want to serve. So, if you're gonna serve BBQ chicken, you need to buy two chickens. One that you de-bone. And one that you leave bone in. And you take the de-boned chicken, the bones, make a stock with that for sure and use the stock in your sauce. So, if it calls for ketchup, which most do. And vinegar and things like that. You need to take half of that portion and give half of it to the stock of the meat that you're making. It changes the whole dynamic of your sauce.
