The best thing to really change the dynamic of a meat is a salad. And it's so simple because when you cook meat, you've got drippings. And what you wanna do is find a good, hardy green like kale or chard or any of those really hardy greens. Shave them then Julienne them and you wanna add those meat drippings. And you want to add a little citrus like lemon or lime, some salt, and some fresh tomato. It really will pop up any meat you put on the dish.
