You take your carrots, your onions, your celery, your [UNKNOWN] without your potatoes and you put them all in the bottom and you create a bed for your chicken. Seize in your chicken very well, put it on top maybe a little bit of butter or some oil, you know and then forward in to your oven for 45 minutes, that chicken. Gets nice and crispy. And of course, as the fat renders down into the vegetables, it really creates a wonderful flavor for those vegetables.
