I think it's important to brine, because turkey- basically you've got so much white meat, you want something that's really moist, so brining helps in that. I love to brine in a maple syrup brine and then I like to load-- underneath the skin, I like to load it with tons of butter, stick my hand up under the skin, load it with butter, season it really well with salt and pepper, and that's what we do.
