Now, indirect grilling is the technique you use when you're cooking something either large, fatty, or tough. You might indirect grill a whole chicken, a whole duck, a pork shoulder. The idea is you rake the coals out into two mounds at opposite sides of the grill. Or, if you're working on a gas grill, you light the outside burners, do your indirect grilling in the center. Lid always closed, that turns your grill into a sort of outdoor oven.
