White miso's one of my favorite ingredients, something I've started to play with a little bit more. It's a fermented soybean paste, and a lot of people don't know what to do with it. It's got this really intense, salty flavor, that you can't get anywhere else. So, I take it, mix with a little bit of olive oil, and I marinate my meats with it. Lamb, beef, chicken, it soaks in a little bit of that saltiness, and actually tenderizes the meat as well. It's absolutely amazing.
