In Spain, there's one thing that's really, really important in Spanish cuisine, it's the blancha, it's a hot griddle. Most people don't have a hot griddle at home but most people do have a cast iron pancake griddle. We can use that, not only for pancakes, but to do a lot of other things. So we're going to do a little dish called [FOREIGN]. It's a lamb top round that's been marinated in saffron, a little lemon and cumin. And then it's skewered and grilled on a hot, on a hot [UNKNOWN], essentially. So all we're gonna do is we're gonna take some lamb top round, or you can use lamb loin. Chop it into nice one inch pieces and skewer it. And then we'll marinate it in some lemon juice with olive oil, saffron, black cumin. A little bit of coriander, mint. Was in a fridge overnight, and then take it out and grill it really quickly on both sides on the plancho, with a little bit of olive oil. And that's it, very, very simple, really easy to do at home, and delicious.
