I'm Scott Conant from Scarpetta Restaurants, today we're gonna cut
a little bit of butternut squash. So I'm just gonna
chop this right in the middle, so I cut it
into quarters like that. I will take this very convenient
peeler and go just like this, right across, nice and
simple. And I'll do the same for the bottom. Now
only the bottom has seeds inside the butternut squash. We'll
take the seeds out with a spoon and then right
into one inch cubes. [SOUND] Easy to work with and
the good thing about it is it's nice and uniform
cooking for later. [SOUND]
