So, I'm Scott Conant from Scarpetta restaurant. So, what I have here today is some pancetta, and pancetta is essentially cured bacon that's unsmoked, and Italians wrap it in a circle. Normally what I do, if I walked into a deli or a butcher, I would ask them to slice this for me. And then, in order to crisp it up I would have it laid out just like this on a sheet tray in a preheated oven of about 375 degrees. And then just unravel those circles so they look like this on the tray. Pop this in the oven, and I've had another tray in here for about between five to seven minutes. It will crisp up nice like this. And I'll use it for anything I would use bacon for.
